Rhubarb Upside-Down
Cake

 

Layer in bottom of greased and floured 9x13 cake pan:

    4 cups chopped rhubarb
    1 1/4 cup sugar
    1 cup small marshmallows

In separate bowl, stir together:

    1 1/4 cups flour
    1/4 tsp. salt
    1 1/4 tsp. baking powder
    3/4 cup sugar

Add and mix well:

    1/2 cup milk
    1 egg (whisked)
    4 tbsp shortening - melted

Pour over the top of marshmallow layer.

Bake at 350f until toothpick test clean.  (25-35 min)
