New Mexico Cookie This recipe was submitted by visitor, Paul Kiler.
He writes . . . "Well, I just looked for the recipe that I thought I had, but it is AWOL.
"It was a great fall and holiday recipe. But it was a basic moist oatmeal cookie, without
the oatmeal, but putting in chopped apples, chopped cranberries, and orange zest, and cinnamon and some nutmeg. They're a lot of work, and don't stay around long, ;-) "But, here is an original,
by yours truly, and you DO have to take into consideration that I live in New Mexico. But they ARE delicious!!!!!!! "Only by His marvelous Grace, Paul Kiler, Art As Servant, 1 Cor. 3:5"
Start with:
A brownie mix box, to make a 9"x9" pan. (adjust the recipe accordingly for altitude)I usually don't put in all the
oil, I just don't like all that oil. If they get too dry, substitute applesauce for the rest of the oil amount . Add the following dry ingredients and mix well:
1 1/2 Tbsp. New Mexico Medium Red Chile Powder
1/2 tsp Cayenne pepper
1 tsp. Ground Ginger 2 1/2 Tbsp Cinnamon
Then add:
The oil water, and egg, as directed on the brownie mix package.
